Buffalo Chicken Stuffed Peppers
Spice up your stuffed pepper game with these buffalo chicken stuffed peppers!
Is anyone else obsessed with all things buffalo flavored? If you’re like me, these buffalo chicken stuffed peppers will be a new favorite!
These stuffed peppers are protein packed with both shredded chicken and Greek yogurt, ensuring you will feel full and satisfied after this meal. This dish also helps you get a ton of vitamins in with those bell peppers, which are excellent sources of vitamin A, C, folate, potassium, and fiber.
INGREDIENTS:
4 bell peppers
1 lb shredded chicken (~4 chicken breasts)
1.5 cups hot sauce
1 cup nonfat plain Greek yogurt
2 tbsp butter
2 tsp garlic powder
Salt and pepper
Blue cheese (for topping)
PAIGE’S TIPS FOR THIS RECIPE…
Tip #1: Make your life easier by shredding a full rotisserie chicken — so much quicker than cooking chicken breast and shredding!
Tip #2: Plain Greek yogurt adds additional protein to this meal without sacrificing flavor. I used nonfat plain Chobani Greek yogurt.
Tip #3: Frank’s red hot is the best hot sauce for this recipe — based solely on my personal preferences, but trust me!
Tip #4: Slice peppers right down the middle of the stem, I have found this method holds better than slicing off the top and filling the full pepper.
Tip #5: Don’t forget to add a little water to the bottom of the baking dish - just enough to cover the bottom of your pan.
INSTRUCTIONS:
Preheat oven to 375° & coat a baking dish wish spray. Slice peppers and remove seeds.
In a pan, mix hot sauce, butter, garlic powder, salt and pepper.
Stir in chicken, then stir in Greek yogurt.
Fill inside of peppers with buffalo chicken mix.
Add a little water to the bottom of the baking dish - just enough to cover the bottom of your pan.
Bake for 30 minutes. Add blue cheese as soon as you remove from the oven & enjoy!
