Pecorino Crusted Pork Loin
This recipe checks all the boxes — it’s simple, requires less than 5 ingredients, and is delicious!
A lot of people are surprised to hear that a dietitian loves red meat, but incorporating red meat can absolutely be part of a well-balanced diet! Red meat tends to have a higher fat content than poultry and other lean protein sources, but it is still packed with tons of vitamins and minerals. Pork loin contains adequate amounts of vitamins B6, B12, niacin, iron, zinc, and selenium, in addition to protein of course!
This recipe uses the pork loin, a leaner cut of meat.
INGREDIENTS:
Three 7 oz. pork loin chops
1 cup panko bread crumbs
1/4 cup grated pecorino romano cheese
1 egg
Salt and pepper to season
IF YOU NEED TO MAKE SOME SWAPS…
For this recipe I used 4C plain panko breadcrumbs because I love the light, flaky crust that it gives. However, any style breadcrumbs can work for this recipe.
Parmesan cheese also works very well in this recipe, so use whichever cheese you prefer or have on hand!
To make recipe gluten-free, simply use gluten-free panko.
INSTRUCTIONS:
Season raw pork chops with salt and pepper
In two separate bowls: add one cup of panko bread crumbs and 1/4 cup pecorino cheese, and mix together. In other bowl, whisk one egg. Coat pork chop in egg so that the breadcrumbs stick, then cover each side of the chop with bread crumbs. Make sure to also get the sides and fill in any gaps with extra breadcrumbs.
Line chops on a baking sheet and bake at 350˚F for 40-45 minutes.
*Bake until pork chops are tender, breadcrumbs are golden, and cheese is melted.
