Slow Cooker Beef Minestrone Stew

This beef minestrone stew is filling, hearty, and delicious. Throw the ingredients into your slow cooker and let this stew cook for itself!

I am loving this beef minestrone stew recipe! Slow cooker recipes are some of my favorites because they are so easy - dump everything in the pot, put the timer on, and done! This is definitely a fall and winter staple.


INGREDIENTS:

  • 3 cups beef stock

  • 1.5 lbs. stewing meat, cut into bite sized pieces

  • 1 medium onion, diced

  • 4 carrots

  • 1 (14.5 oz.) can diced tomatoes

  • 1 (10 oz.) package frozen mixed vegetables ( I used a peas, carrot, corn mix)

  • 1 tablespoon dried basil

  • 1 teaspoon dried oregano

  • 1 bay leaf

  • Optional: pasta of choice, parmesan cheese, fresh parsley for garnish

Pasta is optional for this recipe, but it definitely makes it filling and tasty! Since this is a slow cooker recipe, I recommend making pasta of choice separately on the side and adding the cooked pasta to the slow cooker once the stew is complete. Use ~1 cup dry pasta of choice. Since this is a stew recipe, I recommend a smaller pasta, such as elbows or ditalini.

Topping this recipe with red pepper flakes, grated parmesan, and fresh parsley are some of my favorites that add to the flavor!

This recipe specifically uses stewing beef, but the recipe can also be made meat-free! Simply replace the beef broth with vegetable broth, and add white beans for an additional protein source rather than the beef.

INSTRUCTIONS:

  1. Combine all ingredients into a slow cooker.

  2. Cover and cook on high for 4-5 hours.

  3. Optional: add cooked pasta to finished stew, top with parmesan and fresh parsley.
